Undecalactone
- A synthetic flavoring (peach) use
in things from candies to soft drinks. The FDA limits the amounts that can be
used.
Undecanals
1, 10 - These are flower-like flavors used in many
processed foods. The amounts used are limited by the FDA.
Vanilla,
Vanilla Extract - Vanilla comes from the pods of a
wild orchid which is native to the rain forests of southern Mexico. The beans of
these pods are ripened, then cured and fermented to bring out the flavor we all
know as vanilla. The extract is a solution which contains about 35% alcohol and
has a much stronger taste. It (the extract) may also contain sugar or corn
syrup, glycerin and/or propylene glycol. GRAS.
Vanillin
- This product exists naturally in several places
(wood pulp, potato parings, and vanilla extract), but it is considered a
synthetic flavoring. Compared to equal amounts of vanilla, vanillin is much
stronger and cheaper as well. This product, though mildly toxic is considered
safe by the FDA due to the small amounts of it that are needed to produce a
vanilla-like flavor.
Waxy
Cornstarch, Waxy Rice Flour -
These are
starches that are high in amylopectin. When heated they form clear, smooth,
stable gels and are widely used in prepared puddings and sauces. GRAS.
